Halloween Recap 2018 and Pumpkin Egg in a Hole

Halloween was an absolute blast! I don’t know if your family had as much as we did, but we hope it was! Winter, Laura, Mom and myself were a coven of witches and had the best time handing out candy to the neighborhood in our front yard and going trick or treating with Winter. We actually went trick or treating three different times this year with Winter so that was fun for her and she has QUITE the candy haul this year…that we our all sneaking yummy things out of :) (what? obviously, she can’t eat ALL that candy by herself! lol).

We were a cute little coven of witches and were a big hit! The even bigger hit though was my little witch below Winter.

We hope you guys had as much as we did yesterday :) I made Pumpkin Egg and a Holes for breakfast this morning in honor of Fall and saying goodbye to one of my favorite holidays: Halloween. We will miss you and can’t wait to see you next year!

Pumpkin Egg in a Holes-Yum! Now, if you have never heard of Egg in a Holes don’t worry because they go by lots of other names depending on where you are from. Originally, our family was from the Mid West, but then we lived in Texas for over 20 years so some things we say are a bit different than people know. For instance, I have heard Egg in a Holes also called One Eyed Jacks, Toads in a hole, Eggs in a Frame, Pirate Eyes, and even Egg in a Basket by a very special Southern lady named Karyn (yes, our sister-in-law who married our brother, Josh-she is really more like another sister to us :) ). They are a delicious breakfast treat and super easy as well. You can make it a scrambled egg in the middle if you like even and paint them with the orange milk paint from the recipe I made before of Halloween Toast. Hope you enjoy them! Pumpkin Egg in a Holes

prep time: 5 minscook time: 10 minstotal time: 15 mins

Halloween is over and now it's time for Thanksgiving! Pumpkin everything! Including these wonderful, quick egg in the holes.

ingredients:

  • 4 slices of sourdough bread
  • 4 eggs
  • 4 small pieces of green pepper
  • 1/4 cup milk
  • orange food coloring
  • 4 tbsp butter or margarine 
  • salt and pepper 
  • small craft paint brush

instructions:

  1. Heat the skillet on medium heat.
  2. Cut a round hole large enough for the egg to be cracked into. (see notes)
  3. Slather each side of the toast with 1 tablespoon of butter and place in the pan. 
  4. Let the toast cook for 1 minute before flipping it over and cracking 1 egg into each center for the pumpkin. Add the green pepper piece to the top of the bread so that it looks like a stem. Add a dash of salt and pepper to the egg.
  5. After about 5 minutes, carefully flip the toast over and let cook for another 5-10 minutes (depending on how each person likes their eggs).
  6. Next, make the milk paint by combining the milk and 1 drop of orange food coloring. Paint the egg part of the toast and create the pumpkin look. Flip over and let the milk cook for 1 minute and then serve.

NOTES:

* You could use a small pumpkin cookie cutter to make the pumpkin shaped hole for the egg or a small biscuit cutter works too.
* Wondering what to do with the leftover bread from the toast? It is great with butter and cooked alongside the egg in a holes.
