Fantastic, Yet Simple Potato Hash

I hope you are doing well in these trying times of the new COVID-19 world. I know that things are absolutely crazy right now, but hang in there, it will be over soon! It’s hard not being able to go to a park and play on the playground or to go shop in a retail store, or in my case even go work at a retail store, but things will be better soon and we can all go back to our normal lives before you know it. HANG IN THERE!
In honor of staying safe at home for a little while longer, I have a super easy and great recipe to share with you today: Fantastic, Yet Simple Potato Hash. This recipe is super easy and is ready in just 30 minutes! It is a traditional Breakfast food and great when you add an egg on top (fried, boiled, scrambled…whatever your heart desires). However, you could totally make it for Dinner or skip the egg and put the Potato Hash right next to some great grilled Chicken or a baked Pork Chop. Another reason why this recipe is so great is because you can mix and match ingredients to match what you have/prefer. I like to use whatever potato I have on hand. Today, I happened to have some fancy multi-colored mini potatoes today and they were beautiful, but seriously any kind of potato works. You can also customize your veggies. Don’t have onion or don’t care for peppers or tomatoes? You can absolutely omit them and sub them in for something else. This is great with Sweet Potatoes or Squash- they have a beautiful Fall look to them and are delicious!
You can also customize your seasonings and add-ins to this. I like Garlic Powder and Paprika for mine with Lime and Cilantro as my flavors, but if you wanted to do a lemon pepper seasoning or a BBQ seasoning with some Parsley and Lemon instead or just leave them plain with salt and pepper, you totally could and they would still be delicious! You could even get rid of the cream sauce if you wanted (though it is fantastic). You really can’t mess this recipe up because it is so simple. I love having a nice versatile recipe in my repertoire or recipe box.
So, the first thing you want to do is pull all your ingredients together and get everything ready to just throw together. So, decide on your potato type, your mix ins like onions and peppers, what kind of dry seasonings you want to add like a dash of Garlic Powder and Paprika, what kind of fresh herb or flavorings you can add like Lime and Cilantro, and get ready to go!
After preparing all of your ingredients, melt 2 tablespoons of Butter and then add Potatoes and cook over Medium- High heat until crispy on the edges. Sprinkle with salt and pepper here. (Note: These will not be cooked yet and that’s just fine). Add in your first set of mix ins, mine was the onion and peppers. Now, add your seasonings like Garlic Powder and Paprika and 1/4 cup of water. Cover the mix and cook on Medium heat for 5-7 minutes until the potatoes are tender. If the mix looks like it is browning, turn down the heat and add a bit more water.
Next, once the water has evaporated, you will add the remaining 2 Tablespoons of butter and turn the temperature back up to Medium High for 2 minutes while you let them get all crispy.
Meanwhile, mix the sour cream, half the lime juice, half the lime zest, half the cilantro, and salt and pepper. Set aside.
You will add the other mix ins right now: for me that is Tomatoes, Lime juice and Zest, Green Onion, and my Cilantro. Remove from heat and top it with a beautiful fried egg like I did and put the cream sauce on the side. I sprinkled a little Romano cheese I had laying around and some extra cilantro on top of mine (presentation and all). Here is where you can decide to serve it with something else like Chicken or go my route. Either way have fun with it and Enjoy!
